Homemade Sushi

I know a lot of you have probably made a New Years resolution to either lose weight, eat healthy or get fit- personally I'm wanting to get back in shape. Because the first semester of uni seems to have given me a bit of a beer belly I'm planning on limiting myself on alcohol, cheese and I'm going to get back into exercise. Here is a nice, healthy meal idea for you all.

For this meal you need a sushi rolling mat, seaweed sheets and sushi rice and I was astonished when I found just how inexpensive this stuff is. I got everything from Sainsbury's in the continental food section and it cost me under a fiver for the lot! When you bare in mind that there is enough rice to fill 4 sheets (which you awkwardly get 5 of) it's pretty good value for money.

Seaweed is really good for you and contain lots of iron which is never a bad thing for fellow females or vegetarians. All I did was chop up some veg, cook the rice as it said then roll it as the instructions showed on the packaging for the mat. Even my blogging partner Shannon could manage to make this (shhh don't tell her I said that!) Unfortunately the pan I used was pants and a lot of rice stuck to it. The lack of rice then meant my sushi was less packed and harder to roll but otherwise it was surprisingly easy!

I really enjoyed trying this and as this vegetable sushi provided a good amount of iron, zinc and calcium. I'll be eating this on a regular basis now as I can afford it on a student budget, its better for me than supernoodles and cheaper than Quorn!
